Lazy Peanut Butter and Jam Muffins

I love to bake and the children certainly love a nice muffin every now and then. But just sometimes I cant be bothered to get the stand mixer out and have to clean it all afterwards, we don't have a dishwasher so its left to me to scrub it down after the baking is all done.
A delivery from Oxo last week meant I needed to get my bake on to try out some of the great baking gadgets for me to try out.
I am a big fan of the Oxo childrens range but I am a newbie when it comes to the Oxo home range and I'm excited to discover more. I have been sent the Bakers Dusting Wand rrp £10 and the Cupcake Corer rrp £6. I decided it was a Lazy Peanut Butter and Jam Muffin day, I shouldn't really call it a recipe as its a bit of a cheat, but its ideal if you only have 5 spare minutes in between the wave of school runs.
All you need is a packet of simple sponge mix, eggs, jam and either peanut butter or our favourite the Peanut Hottie powdered drink. Whip up your sponge mix and add 2 heaped tablespoons of peanut hottie or peanut butter and mix in. Divide into cake cases and bake in oven for about 15 minutes, and the beauty of this 'recipe' is all you need is a bowl and a spoon! minimal dishes.
Once the muffins are ready leave them to cool for a good 20 minutes so they are cool all the way through. This is where the cupcake corer comes in and I love how easy it is to use, after trying and failing previously to do some myself this is an ingenious invention. Its only little and fits lovely into the palm of your hand. Simple place it over the middle of your muffin and slowly but firmly push it down, this makes a circular hole is your cupcake and as you remove the device the middle of the cupcake is inside, you simply push the plunger down and it pops out the middle of your cupcake. It made short work out of hollowing out the 12 muffins in seconds, all the middle came out whole to, so I was able to slice them in half to make them into angel wings.
Next part is to pop a blob of jam inside each muffin and a blog of squirty cream (if you have the time you can go that extra mile and whip up some butter cream or buy some pre made) but squirty is ideal if they are being eaten straight away, as they do in this house of 6 people!
I now had the chance to use my new swanky bakers duster! I always make such a mess when dusting my cakes and there is no minimal mess way to do it from a standard shaker, try as you might it gets everywhere! The duster is stainless steel so built to last and it has a handy twister at the end of the handle which opens and closes the duster. Scoop you icing sugar into the reservoir and twist the end to close it. Flip it over and dust away, I love it I am in dusting heaven.
